Preheat your oven to 325°F (165°C). 1 Remove the turkey giblets and neck from the cavity; pat the turkey dry with paper towels. 2 Mix the softened butter, salt, pepper, and the rest of the dry ingredients. 3 Rub about half of the butter mixture under the skin and the rest all over the turkey. 4 Place the turkey on a roasting rack in a large pan, pour chicken broth into the pan, and cover the turkey loosely with aluminum foil to avoid over-browning. 5 Roast the turkey in the preheated oven. Mix until smooth. Mix Wet Ingredients: 2 In a separate bowl, whisk flour, baking soda, baking powder, pumpkin pie spice, and salt. Gradually mix dry ingredients into wet ingredients until just combined. Add Dry Ingredients: 3 Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
